I agree with the others that there really is not much difference. Sometimes the arrow in a pump is shown as filled (solid black) for hydraulic and outline only for air, but otherwise they are the same. The types of valves used most often are different, because air is vented to atmosphere, and compressible, etc. so the overall schematics will look different, but individual symbols are the same.
