Think of topics which interest you which are easilly expanded from a simple achievable start point to become increasingly complex as time allows.
Thus the project can always be at a state of 'near completion' and can always be finished quickly if you run out of time, or expanded if more time is available.

But above all do something you find interesting, and only you know what that is.
