How many units in the block? What's the expected population and wastewater volumetric flowrate? What do the relevant local building codes say? Without all these details, no one can tell you how to size the grease trap, and if you can't size the trap, then no one can tell you the best material and construction method to use.

Please provide all the relevant information listed above. I want to help you on this but I can't do so without them.
