But in your first paragraph, you say 'image processing algorithms', which to me implies actually bit-banging the image file. In either case, I guess it depends on your being able to handle whatever file format the camera sends, doesn't it?

Yes it is possible. My company and other machine vision specialists do it as a matter of course. You just scan the image pixel by pixel and devise your own method of using the data you obtain.
