Food Technology Promises a Tasty Future

Analytical Flavor Systems, a technology startup at Penn State, is building a quality control software system that can help brewers identify and categorize 24 distinct flavor components in their coffee, tea, or beer. The Gastrograph software system allows tasters to qualify the unique components of their product, ranging from taste profiles such as "herbaceous" to "marine." Based on this data, the Gastrograph uses a proprietary algorithm to develop a circular graph that, when compared to the beverage's ideal profile, can reveal problems with particular flavor components or even contamination.
