Why do they hidden an unnecessary o-ring?

Because it isn't "unnecessary" or "hidden", what you are seeing is the milling of flats onto the original round stock that forms the inlet orifice of the manometer. The real question is why didn't they mill those flats during the original manufacturer of the part.

But now you know why you pay big money for factory trained technicians to replace an inexpensive part like an o-ring.
