I'd like to know how to choose breaker trip size/settings for different kinds of loads: eg.:

# for Motors

# for Generators

# for lighting and general power

Good idea. One size does not fit all. Hire an electrician. Read codes. Get permits. Tell me where you live so I can arrange to be out of town.

That is something that is subject to codes and rules wherever you live, You failed to identify your location in your profile, so we can't help.
