Simple: As load is applied (as the bolts are tightened) the gasket windings compress to fill the voids and irregularities of the sealing surfaces. The filler winding allows greater ability to fill such irregularities than would a single sheet of gasket material (consider a mattress with individually-contained springs rather than interlocked-springs. The former conforms better to the shape of your body). Inner and outer rings (if incorporated) prevent extrusion and help to locate the gasket.
