if you "google" motor rewind courses, there are loads of ideas but I could not find a specific course. Many people learn to rewind as part of apprenticeship or they are working in a rewind shop. Not something you can be taught by "distance learning". find a job rewinding motors is the best suggestion I could give

EASA (Electrical Apparatus Service Association) has a really good electric motor repair course. Here is there web site, the couse is call EASA VO-Tech. www.easa.com

Checked out easa and found the prices for joining quite high. Documentation for non members is also high.

There is no better way to learn than by doing ... hence, all the apprenticeship programs.

However, if it is "book-level-learning" that you seek, I stand by my comment posted elsewhere on CR4... there is no better book for learning motor repair than the one which was the "bible" for everyone at the rewind shop where I spent a number of years:

Rosenberg's Electric Motor Repair ...
