Ok. Hard to say. But, without taking a look at the real stuff, I'd say that you could have some problems. Because the procedure of manufacturing the gasket could result in a product with a deformed cristaline structure, which ends to improve material tensile strengh and hardness. This improvement could not be benefitial to a sealing gasket, because it could prevent the gasket to deform and seat properly, and also could make it wear the seat or housing where it is supposed to rest and press.

Do you have an original spec asking for annealing after manufacture? This is likely to happen to lower material hardness to me.

A lot of these are with soft metals ? any problems with them? why do you want steel?

I don't understand why you'd want to change gasket types, but I would say use Flexitallic, (that is a brand name, but stick with this type). Spiral Wound, Type R. Depending on what you're running through there, you can also apply a skim coat of Loctite high temp (red gel) sealant to the gasket for extra measure. Sorry, can't remember the number.
