Diffrence Between Twisted Pair and Other Cables

My question is that why the pairs of signal cables twist and where is such cable is used? What is the difference in between strait cable and twisted pair cable?

When the cables are twisted pairs each conductor in the pair cancel the noise on the other providing for a reliable signal.
