No idea, do you want to understand them for research purposes or design and/or repair them from a practical hardware/software point of view?
Try talking with local universities (or looking at their websites), these are still the best places to start for such specialised enquires. You may have some luck with medical masters courses, but don't forget you will need the associated qualifications and pre-requisite courses to to do the masters (not so helpful if you only have electrical engineering qualifications). If you are lucky there will be a side course on CT scanners that you may be able to do (but then again it depends on the course,m university, country, etc).
What country are you in and what universities have you tried already? What qualifications do you have so far that will allow you to jump directly into a masters course (or is this a very long-term plan for you).

I don't think there is any master's course for such specific equipment. However, the master's course, along with other related topics, may have the theory that is used for the CT scan (or CAT scan). By 'deeply covers', do you mean technical details about how the CT scan works or how to use it to do the CT scan?
For technical details, it is better to contact with manufacturer, some times the manufacturers may have good technical documents for their products. For use of CT scan, search for the specific technological courses in radiology.
