Cv is the "flow coefficient" of the valve, used to calculate how much fluid will pass through given a certain amount of pressure drop.

Bench-set refers to the calibration of the valve following a rebuild: specifically setting the spring tension and the stem travel.

Characteristic refers to the function of Cv versus stem position.

I would also recommend any of the literature available from Emerson (Fisher valve corporation) at:

Probably the best single book for you is Fisher's Control Valve Handbook:
