Puff Pastry, Bakery Equipment

I cannot find an equipment for sheeting stiff multi laminated (16 layers per 1.5 inch height) non fermented dough n rounding 100 gms portions of it. Please suggest some equipment or method which does not rupture sheeting n laminate while rounding automatically.Thanks

I have already inquired from some US and other bakery equipment manufacturers but no success. I have also sent an inquiry to the maker you suggested. But I do not think they make machine for the purpose.

Does anyone have idea as to how this product is divided and rolled into portions for baking? Here is some information about the final product.which is currently produced manually because NO equipement is yet availble on the market for sheeting, dividing and rolling it into its final shape. This means this item is a CHALLENGE for engineers and scientists, Oh!

In a previous life (when I was in the baking industry), there was a company called Rheon that made croissant and puffed pastry type equipment. I don't know what they currently manufacture but they have a web site at: www.rheon.com.

A division of Baker Perkins used to manufacture bakery equipment. They were purchased years ago by APV who was then bought by someone else. At some point, one or two of the divisions were spun off. I see they have a web site at: www.bakerperkinsgroup.com. They were never in to multi-layered dough (mostly "standard" bread dividers, rounders, etc.) but they may have branched out.

thanks, but I am in touch with them n awaiting their response. BTW conventional bakery sheeters n rounders don't work on baqarkhani. Some new method has to be sought to prepare the product automatically.
