I read in the text that on stainless steel, an oxide layer develops and if I understand the text correctly, pitting can occur if there are impurities in the water.

It doesn't say what kind of impurities that those are, or maybe I misunderstood something.

Also, can or could distilled or purified water be used so there would not be impurities ?

For the most part, this article was written in a very easy to understand format.

I will be addressing the impurities in Part 3, and perhaps an extension of this series if interest continues. The leading impurity that causes problems with stainless steel is chloride. It can penetrate SS oxide layers and set up localized corrosion cells that can cause very rapid through-wall penetrations. I have seen microbiologically influenced corrosion (MIC) in stagnant waters also cause rapid SS failure.

Yes, the type of stainless (and other steels) has an important effect on corrosion. Different grades have different alloying elements, and these greatly influence the properties of steel. Parts 1 and 2 of the article were to set the stage for some of the basics. More details will be upcoming in Part 3, and perhaps further continuation depending upon continued interest.
