The 'soap' in grease acts like a sponge to hold the oil (which is the lubricant.) Some oil WILL weep out over time. High temps will increase this. The oil will oxidize over time-starting at the surface exposed to air. Sometimes the grease will get 'lumpy' and may not wick the oil to the bearing surface as good as when fresh. If the texture and smell are OK, it is good to use.

About a month ago, Dupont gave a web-cast in connection with their KRYTOX lubricant line. I expected a sales pitch but instead got a well put together explanation of lubricants on an engineering level. It wasn't even slanted toward their products, just straight forward (although the KRYTOX line is phenomenal in its properties). You might want to hunt and see if that web-cast is available.
