Why do you think alloxan is used to bleach flour? Have you no chlorine?
Please state a peer-reviewed article showing that alloxan causes diabetes in humans or that it is added to flour during processing (yes, I know small amounts of it may be formed by the flour itself).

I am no fan of pharmaceutical companies, but why should they care? The trace amount of alloxan in white flour is thought to come from the flour itself rather than from an additive. Why not just use unbleached, whole-grain flour? It certainly tastes better.

I am willing to be convinced about the dangers of alloxan. I have fewer worries than you, perhaps, because I prefer the tase of whole grain, unbleached, bread. Please feel free to forward any scientifically valid evidence you might find.
