Difference between carbon fiber sheets and carbon fiber glass. ?

What is the difference between carbon fiber glass and carbon fiber sheets?

Also out of the 2 sites i listed what would be the best option. Are they both the same thing? I know dragon plate sells stuff for the army and NASA. Do you think there would be a difference. I'm using the 0.25 or thinner. I like how the one sight has colors. In basic terms I'm trying to figure out which would be the strongest. Also. The thinner the carbon fiber the more bendable correct? I am not using it for cars. I'm using it to make fingerboards( 100mm length 28mm width). Yea I know It sounds stupid. LOL. But I have searched Google and can't find the answers I'm looking for.

Would a thinner be more efficient if i am using it with wood and epoxy? Trying to get something light yet strong.
