New Cleanup Rule Opens Door to Savings

The USDA's notice 27-06 extends the time between clean up and sanitation procedures at food processing plants, offering up to 30% in savings on sanitation costs to many food processors. Taking advantage of the new rule requires extensive documentation of standard operating procedures, starting with senior management and down to the MRO organization.

Hard to believe they're doing this, easing up on food plants, after all the rash of food-borne e-coli scares and illnesses. Doesn't bode well for improved sanitation, but follows the trend over recent years of increased leniency in USDA oversight of meat and poultry plants. Kind of like letting the fox watch the hen house.
