Japanese-Style Knives

I am wondering if the traditional Japanese style knives (bevel on one side only) is made in left hand and right hand styles? Are the Western style knives (bevel on both sides) becoming more common in Japan?

They have to be. Those "one sided" knives will not cut s straight line for anything, as for slicing a roast or ham, just give up and get out the old 1960's vintage electric knife.

Yes they are, last trip to Tokyo/Sapporo I saw quite a variety (was shopping for them though, was a chef). Not cheap by any means. Shun are an off the shelf brand you can find in Australia (probably elsewhere) and they are 2-3 times the price of others.

Most "good chefs" I met over use a knife/sword maker, thats expensive.

I'm not sure why you're asking, but, budding knives are bevelled on (only) one side because you want the blade to naturally "rotate" back out of the stalk when you remove the bud. I see that Tina make left handed knives:-

I used to be a rose budder as a summer job when I was a student, and, I made some of my own knives by re-grinding old cut throat razors.

All the Japanese style knives I've seen have the bevel on the right side, hence a RH knife for a RH'ed person. If you are LH'ed, a knife with a LH bevel would be needed.

Here are two places that sell japanese made knives. I don't think any but the carpenter knives are one side beveled.

Hello ronseto,

I once thought I was getting a 'bargain' when buying 'cheap' knives from someone calling at the front door. They were impossible for me to use as they always cut to the left. Could not cut a straight line at all! So those 'bargain' knives were not much of a bargain!
