A liquid is sub-cooled when its vapour pressure is less than the system pressure, i.e. it is at a temperature less than its boiling temperature. For example, water at 25degC and 1 bar absolute pressure is sub-cooled.

High superheat is where a gas is at a temperature way above its condensation temperature at that pressure. For example, air at 25degC and 1 bar absolute pressure is at high superheat.
