how could i draw a real 3d pvt diagram for a pure fluid?

You need to have the appropriate data for that substance: the density (ρ) or specific volume (V) at different temperatures and pressures. Then simply enter this data into a program capable of 3D graphing (Excel does not have this capability - it only can give 3D appearance). Temperature on one axis, pressure on the second and specific volume or density (ρ = 1/V) on the third.
