It also depends on the application. If all else fails ...experiment.

It also depends on how durable and what kind of load one anticipates on the joint. To adhere a sheet of paper to a metal surface, simple adhesive tape will do. To attach a metal label to a metal chassis many metal labels come with a solvent triggered contact adhesive already on the label. There's also the myriad of cyanoacrylate products (Crazy Glue, Eastman 910) that work quite well depending on the load.

Epoxy adhesives, cyanoacrylate adhesives and impact adhesives can all be used in the right circumstances.
Most mechanical engineers will favour a more predictable fastening such as bolts, rivets or welding.
