It depends on the shape of the dish: flat with flanges, conical, spherical segment, semi-elliptical head as used for pressure vessels, torispherical head, or other desired shape. There are formulas for these, torispherical being the most complicated.

Simplest way: 2 x √{[(Volume of water)÷ (Depth)]÷π}, but this is only applicable to cylindrical containers.
