Most of the guages are designed based on the Taylor's principle. You may not get any book specifically on this aspect, however get any good book on gauge design (and in the history/ preface) it will mention it.

The principle is too simple to write a book about.

In brief

a) The gauges are designed to- so that GO checks the MM condition while NOGO the LM condition.

b) GO checks all the features at one go whereas you need a separate NOGO for each distinct feature.

BTW: Most of these aspects are covered in GD&T too.
