I want to have knowledge about how induction motors and dc series motors works for the hoisting applicatons like cranes, lifts.

Read the books "Utilization of electrical power" or AC-DC electrical machines....These subjects were included in the Engineering syllabus. What did you do with the money for the text books?

Do some research. Are you familiar with the concept of a search engine?

Cranes, hoists, trains.... many such applications need high starting torques. In AC, slip-ring induction motors whose torque can be controlled were used before, nowadays solid-state controllers are more common. In DC, traction motors have been around for a long time anyway.

As suggested by Lynlynch, you can find millions of pages on these.

The DC series motor is used for the application which demands high starting torque. But other side of the story is that the speed regulation of the DC series motor is poor. The combination of high starting torque and the speed regulation can be best achieved by using compound DC motor.

The Variable voltage variable frequency drive (VVVF) onown as VFD is best suited for the hoisting application. The starting torque of the motor can be increased for a shorter period of time at start with over fluxing the motor by large V/f ratio.
