Check-out the article in Wikipedia on globe valves and start from there.

what about the inner lining of the valve body? Is that also called trim? if yes then, Is the inner lining is made of 13% cr for any carbon steel valve body?
Not sure what you mean by the 'inner lining'. If you mean the material surrounding the Spindle in my sketch, that's called a 'Bonnet' and is not part of the Trim and would not normally be made of stainless steel in a carbon steel valve (unless your standard product was stainless and making a carbon steel version would be an expensive one-off)
no no not bonnet.. i meant to say the body itself. after flowing through the valve body only, the fluid will be able to come in contact with disc, stem and other trim parts. so i was asking whether internal part of body can also be considered as a part of trim. hope u get me now..
It is not unusual to have stainless trim parts in a carbon steel valve, but it will be quite tricky to have a stainless inner surface in a carbon steel body (ref your comment #4)
I would endorse P.W.Slack's comment and have a look at Wikipedia.
Thinking about this further; it is fairly common to have a stainless steel (440C) or corrosion resisting steel (BS3S145) Seat brazed into a carbon steel Body. This could conceivably be specified as part of the valve trim. Perhaps this is what you had in mind in post #4
