SODIUM METABISULFITE....

So I'am trying to find a compound to replace this compound and am looking for something else that has the same characteristcs as sodium metabisulfite. The reason being is because, the taste and the odor is strong and tends to ruin the taste of juice products being developed. Reason being it has not been removed completely from my products is because "META" helps preserve the freshness and the color of the products. I'am sorry if there are any other posts similar to this I've done my research on here and google and elsewhere and am having no luck. So anything will help.

You're using it to strip dissolved oxygen from the juice so as to preserve it right? What you can do is to write in to your local health authorities for a list of oxygen strippers approved for use in food preservation and the maximum allowable concentration (MAC) levels.

We could provide you with such a list, but what is approved for human consumption varies from country to country, and even what is approved by all countries may differ in MAC levels. Also, any list that we provide here will not be comprehensive, so if you find those recommended here unsuitable for your use, you will need to keep asking until you find the right one. For these reasons it would be best to refer to your local authorities for their recommendations.

Awesome. This helps out alot! A list of the strippers would be nice as well. Then at that point I could just do some research on the list and try to find out as much as possible to narrow things down, then move on to the authorities.

You can get a list of approved food additives for Australia on the following website:

https://www.legislation.gov.au/Details/F2017C00312

From here, you can extract out the list of food preservatives and make your inquiries.

Here are teh others for you investigatoin:

Sodium pyrosulfite; Disodium Salt Pyrosulfurous Acid; Disulfurous acid, disodium salt, Pyrosulfurous acid, disodium salt; Sodium disulfite; Sodium Pyrosulfite; Sodium disulfite; Disodium disulfite.

Be Careful of this substances. THey are very toxicity, and 1 Molecule away from being MArgarine.

In the interest of clearer understanding would you please explain

1) what is meant by Sodium disulfite?

2) How it is that these inorganic substances are "1 molecule away from margarine?" Mararine is about 80% hydrogenated fat(ORGANIC substances) withabout 20% water solids and other additives. I do not see how an inorganic salt is "1 molecule away" from this...

3) "They are very toxicity" is somewhat contrary to the point of being a food additive, And I note that Sodium Metabisulfite has an acceptable daily intake of 7mg per kg of body weight. MSDS sheets I have seen say nothing regarding toxicity of this substance..

I'm thinking perhaps that Sodium BISULFITE is the answer to 1); I have no clue about 2) or 3).

Just looking for some sensemaking on these issues, not trying to pick a fight.

I noticed these points also. However, since the OP is in the food manufacturing business and is intelligent enough to do his own research after only needing to be pointed in the right direction I decided not to pursue the matter. After all, at least he DID say that these substances are toxic.

Going back on topic, I might suggest that the OP explore using the potassium counterpart to these DO strippers if they are approved for food use so that they will not contribute to his consumers' daily sodium intake.

By the way, did Hugh Hefner agree to give you a list of strippers at the Playboy Mansion?
