what is condensable and non condensable refer to in a steam jet vacuum system?

Consider air that is being propelled out of a system by a jet of steam. Should the mixture be cooled the steam will condense to form water droplets, though the air will be largely unaffected. Does that help?

oxygen would be a noncondensable gas of great interest in boiler work
