Please help me to ensure the correct selection for 8" pup piece of Internal diameter of 193.3mm and thickness 12.7 mm to be welded to 8" ball valve of bore of 203 mm.
There is a mix of Imperial and SI units here, so I am not fully sure of all dimensions. The pup's thickness of 12.7 mm = 0.50 inch suggests an Imperial 8" pipe (8.625" o.d. ≈ 219 mm o.d.) And 193.3 + (2 x 12.7) = 218.7 mm, confirming the foregoing.
What is the end finish of the 8" ball valve? The 203 mm bore does not match a socket weld, so the end o.d. of the valve should be ~219 mm to match the pipe o.d. If this is correct so far, you need to get the i.d. of the pipe (193.3 mm) to match more closely to the i.d. of the valve end (203 mm). The inside of the pipe should be machined or ground at no more than 1:3 taper to match the i.d. of the valve (within a tolerance of 1.0 to 1.5 mm). The joint would be a butt weld; the valve and the pipe should be beveled 37.5° to form a total included angle of 75°.

The valve is 8" Ball valve welded ends, Full bore, CL 300, acc. To API 6D, Trunion mounted & Ball and Body forged steel. So,What is the solution please
The key item is this: "The inside of the pipe should be machined or ground at no more than 1:3 taper to match the i.d. of the valve." In other words, make the i.d. of the pipe slope gently so that it matches the i.d. of the valve end.
