Here's one way to launch a pig. Maybe you mean a slower launched pig. Maybe you want a pig that is intended to be launched. I know, you want that great historic pig launch and retrieval for the sake of the glorious people. This one includes great music so there are lots of notes in a minor key.

I would be tempted to use a big air cannon like one of those pumpkin chucker contest guys use. I suspect the note at that point will be a pretty low thump followed by a very high pitched squeal!

For receiving the high velocity pig I would probably go with either a large net or try and skip it across a pond until it lost its momentum then retrieve it with a boat.
