Do you mean, "what defects in welds cannot be detected by ultrasonic tests"?

Cracks in certin orientations. However with the introduction of phased array scopes/transducers this becomes less of a problem. Conventional shear wave inspections can miss given cracks and certin LOF type defects in U preps.

Laminar oriented defects, which is why you do a longitudnal scan next to the weld.

As an afterthought also some defects can be "shadowed" by other defects.
