Try searching online for "motor repair and rewinding". There are many more of each type.
You can learn a lot from books & manuals, but some tricks are best learned from the experienced "old timers" at a repair/rewind shop. They have been been making theory work in the "real world" for a long time and can teach you skills that books and schools cannot.
Good luck!
