Go to one of the other science programs at your school and see if somebody could use an electrical engineering student to help design and fabricate their experiment. While they write up about the results of the experiment, you can write up about the fabrication and limitations of the electrical system you've constructed.

No matter what the project, it should include some intense work on spelling, punctuation and grammar. You will never be successful if you cannot communicate with others properly.

You don't have any preference, so do following.
Select 10 companies you would like to work for.
Find out what the 10 companies make and select a project that involves what each of the 10 companies make.
Take all 10 projects to each of the 10 companies and discuss the projects with the companies.
Write down who you talked to and what they said.
Select one of the projects.
Before summer vacation go to the company whose project you are working on and request to be a summer intern. (or whatever they call it)

If it is a four years degree program, then you might consider doing a design project in Microwave Circuit Design (including plotting on smith chart) ? Power System design (there are nice power saving devices available could be researched further) and Digital System Design (State Machine for Multiple Trains Signal Control etc.) could also be suggested to your adviser of the EE department.....:)
