Great, good for you. I'm glad to hear that you want to learn how to design something. I am confused though about what you wish to design. A triple beam scale is a straight forward mass measuring device that relies purely on lever action. A load cell is an electromechanical device that can be configured into a mass or an acceleration or even a force measuring device. In either case your designing a measuring instrument.
In order to properly design any measuring instrument one must be able to reference your instrument design back to some formal standard. The level of precision and accuracy of your instrument will determine if the standard can just come from a text book or if an internationally recognized laboratory must test and approve your design and instrument.
To succeed in design, one must be able to communicate very well. You must learn and demonstrate how to communicate clearly, long before you can design any measuring instrument. To demonstrate your capability to communicate I challenge you to explain the difference and similarity of the concepts of precision and accuracy.
