Does the Zinc plating with electrocoat processed screw withstand 1000 hrs salt spray life?

Zinc-plated and yellow-passivated woodscrews are sold for that purpose.

Only if is have been certified to meet the requirements of MIL-STD-810.

First, what "salt spray" test are you trying to pass? There are differences in the test methods, salt types, & acceptance criteria. Second, I would suggest talking to fastener suppliers to see if they already have test data available for their coatings. Also, different applications/regions of the world will have different restricted substances that you need to keep in mind.
