Most ceiling fans I have installed have a switch on the side to change rotation. There for change in seasons. Yet to see many people use them. Also just replace the motors on two pedestal fans which had the ability to change rotation.

pitch of the blades

It's to equalize the spin of the fans so we dont throw off our rotation around the sun.
