Some projectors use a special arrangement of prisms to separate the white light source into red, green and blue beams. These beams then illuminate separate imaging forming elements, like LCOS LCDs, and then the RGB images are recombined to create a 'full color' image.

There have been patents granted for using diffraction gratings with conventional LCDs to improve color gamut and luminous efficacy. You might do a patent search if you need more info.
