This question would be easy to answer with a few telephone calls to rock breaker suppliers, the numbers for which are obtainable from a short Google search.

Hydraulic breakers are hydraulic cylinders and make constant strokes so that yo compute stroke volume and get pump flow and divide secon by first result will be number of strokes without considering losses. If you want to measure not compute you may use an accelerometer butsuch a precision is not required.
We use an optical tachometer to test strokes per minute on some of our equipment.

Contactless very good solution ! which type for linear movements ? Most of them are for rotation, how do they work in dust atmosphere (rock breaking generates dust as well) ?
We stick a piece of reflective tape on the moving part. The tach reads each time the tape goes by. Divide the total by two and you have strokes per minute.
One of our applications is quite dusty and this still works. We have another system that creates more of a cloud and we use a proximity sensor to do the same thing.
