Cooling with Heat Exchanger: Is Liquid Nitrogen a Substitute in Ice Cream Making?

in the manufacuring of ice cream making hot milk is first changed to ambient room temprature and then cooled to -4 degrees centigrade by a HEAT EXCHANGER

can liquid nitrogen be used to cool the liquid milk without altering the liquid milks composition by directly pumping liquid nitrogen and cooling the liquid to -4 degrees centigrade

how to measure the liquids -4 degree centigrade

In principle, any source of coolth could be used. The temperature of the fluid, its thermal properties and its flowrate determines the size of the heat exchanger.

What fluid is in use at the moment, please?

Why is there a need to change from it?
