Do you know if it is possible to run two fans on the same relay? Also, do you have any idea how to do it? Cannot figure out which is positive and which is negative and etc.

Two fans from the same relay - yes. You don't say whether the fans are AC or DC, so here's a circuit that shows both:

You could save on a bit of wiring by just using one of the relay contacts and commoning the 'top end' of the two fan motors (this would double the current the relay contacts would carry).

But - and it's a BIG but - a lot depends on the size and type of the fan motors (which you haven't mentioned). My circuit may work once or twice, and then die (with the relay contacts welded together or burnt out), or it may go on forever. I'd strongly advise you to get hold of a local qualified electrical engineer.

For larger DC load breaking ability, connecting both sets of contacts in series will reduce arcing. The addition of a capacitor and series resistor across the contacts will also assist contact longevity

I agree - and there are lots of other measures that can be taken, some better than others and most dependant on the load type and size.

It's a big subject, hence my recommendation.

pin 7 is negative and pin 8 is the positive side of the coil for a DC LY2.

True for the types with LED indication (LY2N) and/or diode suppression (LY2-D), but (according to the OMRON datasheet) the standard LY2 coil is not polarized.

To avoid possible confusion with replacement parts, I should have shown pin 8 +ve.
