As the indoor air is cooled, the air molecules lose energy and become closer together, at dew point the relative humidity reaches 100%, this causes the moisture in the air to condense on the evaporator coil, removing moisture, but the air molecules now being closer together have the same relative humidity but a cooler temperature....

Ooh, this bidirectional PhD thesis may be premature.

Aw, come on. Don't point it out to everyone. Premature refrigeration can be very embarrassing a young AC.

This looks like the correct drawing. The split system is a heat pump - warms in winter, cools in summer.

Sorry, my bad. I assumed the OP was looking for a ductless split system.

Some split systems are regular a/c units, while some are heat pumps.

The OP needs to refer basic Refrigeration 7 AC book to understand the actual process of refrigeration and pschrometry. A.C is one of the applications of refrigeration.

Assuming we are talking about relative humidity, what you stated is often the case, but it is not a steadfast rule.

If the AC unit doesn't reduce some of the air below the dew point, or if it doesn't reduce enough of the air below the dew point, relative humidity can increase.
