WiFi Control for Evaporative Cooler

I was contacted on Friday afternoon by a gentleman that owns a self serve laundromat in Banning, Ca. He has two roof mounted evaporative coolers. He would like to have the coolers controlled by a WiFi capable system.

His idea was to have the coolers turn on or off by means of his cell phone contacting the WiFi controller.

I had been toying with this idea for a couple of years now, although I have not put together a prototype system, mainly due to a communicated lack of interest from the general public.

My idea was this: A wifi enabled thermostat connected to a fan control relay, then connected to the coolers fan motor. I am looking at a 2016 copy of United Refrigeration' catalog, on page 1030-1031, it shows two devices: Hawkeye 735 series sensor relay & Honeywell R8239A 1052 SPDT / R8239B 1076 DPDT.

Coolers have both a fan and a pump, so both need to operate at the same time and the fan needs to operate independently​ of the pump when necessary.

Has anyone worked on such a setup or can tell me if a component has been left out ( Circuit breaker, time delay relay, switching relay, contactor ) ?

Does it have to be Wifi? What is the advantage? Why not use a standard thermostat?

I have a Honeywell th6000 series t-stat that is controlled by wifi and addressable by my iphone....that would be a plug and play...

That seems somewhat abstruse. To be effective, the equipment has to respond to local conditions, not to remote on/off commands! The concept is a solution to a problem that doesn't exist.

But why do you need this? An on/off switch works pretty well. Last thing I want is an run-away evaporative cooler dumping water down the overflow inside my business/domicile. Okay, on a VCC air conditioner I can see using a remote (if nobody is home during the day), but we also need our birds to stay cool or they molt.
