You need to define simple...

Which of the below are appropriate.

Relay, resistor, battery, transformer, mains supply,diode, bridge rectifier,transistor, voltage regulator, capacitor, switch, opto couple, phototransistor, light dependant resistor, motor, microcontroller, logic gates, SCR, Mosfet, LCD display module.

How about a clock that plugs into a mains outlet and counts the cycles of the mains supply?

I did something simillar in an electronics class years ago.

You will need a small transformer to build a power supply to run a counter (50 or 60 cyles per second depending on your mains suppy), some seven segment LED displays and counter drivers and a handful of resistors capacitors etc.

Should not be too difficult and covers fundamentals (power supply, logic etc)

How about a practical, safe and portable project, which you can proudly demonstrate to others.

A door alarm, run from a 9 volt battery, (or a small mains powered power supply, secondary 9 volts - less portable, but cheaper to run) and using a photodiode and an Infra-red photo-emitter.

Use a small lens to focus the infra-red beam (remember the focal length of infra-red is different from visible light.

On the other side of the doorway, use a small mirror, to reflect the infra-red beam back to the sensing photodiode, thus tripping a relay, and ringing a solid-state beeper, or operating a counter or both, or other interesting extra etc.

This project then means you have used electronics, tools, soldering iron, optical skills etc - a good combination in your learning curve.

My older son made such a project when he was aged around 9 years old, with some small help from me.

You need to advise your budget = Amount you are able to spend, because that is the limiting factor for you.

Also advise your location, and if you have access to a local electronics supply shop.

You do not advise your approximate age or experience,so please don't feel insulted, if your ability is far past what I suggested.

You can make a very simple electronic control device that can switch on a light by simple audio signal. You can also design a device to automatically control the temperature of oven using microprocessor.There are many books available in book shops providing electronic projects. They provide circuit diagram and component details for doing electronic projects . From these books I helped many students for their school and college project requirements.The technical competence and knowledge of the person doing the project is criteria for deciding the actual project. Financial capacity to buy the components are the other consideration.For a Secondary school student a simple projects is sufficient. For higher secondary or for graduate student the project has to be more practical oriented. For final year engineering students or Masters student the project has to of very high standard and that has to be done with the help of Industry(electronic factories) connecting their products.So if you Can come out with your actual requirement Some projects can be recommended.So when you put a thread it is always better to provide detailed requirement.
