I believe gel-cell batteries were created for this purpose. Plus they are safer to deal with in a spill. Otherwise, I'd say the amp-hour rating is the most important parameter to look at. Even if the electrolyte won't freeze, it does you no good if the battery runs down when you're miles away from your warm charging station.

Part of it is to select the correct batteries for the expected ambient temperatures. The rest comes down to mechanical design for the expected conditions and appropriate thermal insulation.
