plug valves

Can anyone point me to a formula or other info on designing plug valves. I would like to know the proper angle to allow linear flow from closed to open and the approximate volumn of flow for a given size. The end use will be a propane gas cook stove.

It is likely that stock items will be available, and that <...designing...> them is unnecessary. The next step is an internet search engine and a filter for line sizes, which has been withheld from the forum.
