Here is a materials compatibility database.

Copper has corrosion products that can be poisonous to biological systems. It is also relatively soft, and can erode in contact with some foodstuffs.

Sanitarily-polished stainless steels need to be used for metallic equipment that is in contact with human foodstuffs, for any corrosion products are relatively benign. Water-for-injection, for example, is kept in sanitary stainless steels at elevated temperatures, and hydrogen peroxide is used to sanitise them and their associated pipework at intervals. Flushing to remove all traces of hydrogen peroxide after the sanitisation is essential, as hydrogen peroxide is itself poisonous to biological systems, which is why it is used.

It is assumed that the unit is a test equipment and the milk after testing will not be consumed. If there is some thermal conductivity issues and copper is needed, can you plate this with Chromium-Nickel.

The best cleaning agent is hot water and Teepol followed by a water rinse. Teepol is a neutral detergent used for surgical cleaning and for general cleaning in the medical devices industry. It is itself non-corrosive.
