If you are trying to assemble a rod, tube, or pipe into a place where it must pass through a hole, the piece you are inserting may sag and encounter metal instead of the hole. An "assembly bullet" is a pointed tip (bullet-shaped, hence the name) that guides the inserted piece into and through one or more holes, such as in perforated plates or baffles. This is common in shell-and-tube heat exchangers, for instance.
