I only know two ways - count them or ask the OEM.

One way to count them, or at least to verify the OEM's advice, is vibration analysis of the motor under load. On a high resolution 0 - 10kHz acceleration spectrum, you'll usually see an isolated spectral peak at a frequency corresponding with (motor turning speed) x (rotor bar count), and/or another one at (motor turning speed) x (stator slot count). But if the motor is in poor condition you may also see sidebands around either of those peaks that make them hard to pick.
