I do not know if there are specific load cells available -that you can via google find by your own- but if there are not I consider that you need a 3 components load cell able to measure forces in the 3 directions since the contact with the ground is not only vertical. There are as well side forces you should quantify. The pressure sheets developed by different manufacturers can only measure a normal force and are not able to determine side loads. They can be used with success to measure the distribution of pressure between for instance a foot and a plate on which it stays but not for the complex reaction force between foot and ground.

Can you be more specific. I've built a fair amount of gait analysis equipment in my life but don't understand your question. Give some details and I should be able to help.
